Heat the olive oil in a large skillet over medium high heat on the stove.
Add the chicken to the skillet, and season with salt and pepper to taste.
Saute the chicken until it is about halfway cooked.
Mix the peppers and onions into the skillet, and saute until the vegetables begin to become tender, and the chicken is cooked through.
In a bowl, whisk together the ingredients for the sauce.
Pour the sauce over the chicken and vegetables, and saute for several minutes before serving.
