Preheat the oven to 450 degrees.

Mix together the pork rind crumbs, parmesan cheese and salt and pepper to taste in a shallow bowl.

Ingredients
  

  • 1 lb. Shrimp peeled and deveined with the tails on
  • 2 C. Crushed pork rind crumbs
  • ¼ C. Parmesan cheese
  • Salt and pepper to taste
  • 1 Large egg beaten

For the sauce:

  • ½ C. Mayonnaise
  • 1 Tbsp. Sriracha sauce
  • ½ tsp. Garlic powder
  • Squeeze of fresh lime juice

Instructions
 

  • Preheat the oven to 450 degrees.
  • Mix together the pork rind crumbs, parmesan cheese and salt and pepper to taste in a shallow bowl.
  • Dip the shrimp into the beaten egg and then coat in the pork rind crumb mixture. *Place onto a well greased baking rack over a baking sheet.
  • Bake the shrimp for 8-10 minutes.
  • Combine the ingredients for the sauce and drizzle it over the cooked shrimp.

Notes

* I place a baking rack onto a baking sheet. So, the shrimp can get crispy on the bottom too, but any crumbs that drop are caught by the baking sheet.
