Ingredients
  

  • 4 cups shredded mozzarella cheese
  • 2 ounce cream cheese softened
  • 1 1/2 cups almond flour
  • 3 tsp baking powder
  • 1/2 cup of 1:1 stevia powder
  • 2 tbsp erythritol
  • 2 large eggs

for the filling:

  • 1/2 cup fresh strawberries minced
  • 2 tbsp 1:1 stevia powder
  • 3 tsp erythritol
  • 1/2 tsp lemon extract
  • 1 large egg yolk
  • save the egg white to make an egg wash
  • 4 ounces of cream cheese softened

for the egg wash:

  • mix 1 tsp of water with the egg white you saved and apply with a pastry brush to the danish just before baking.

Instructions
 

  • Shred the mozzarella and melt it in the microwave.
