For the Crust:

  • 1 Egg
  • 1 tbsp Olive Oil
  • 1 tbsp Almond Milk
  • 1 tbsp Almond Flour
  • 1 tbsp Coconut Flour
  • ¼ tsp Baking Powder
  • ¼ tsp Italian Seasoning

For the Topping:

  • 1.5 tbsp Sugar-Free Pizza Sauce
  • 1.5 tbsp Shredded Mozzarella
  • 3 Pepperoni Slices

Instructions
 

  • Whisk together all ingredients for the bread base in a microwave-safe mug.
  • Spread pizza sauce on top of the batter then top with shredded mozzarella and pepperoni.

    Is there a substitute for the coconut flour that would work? Thanks!

    I’ve made this twice, the first time I followed your recipe but the centre wasn’t completely cooked. This time I cooked the crust for two minutes and then added the sauce, cheese along with bacon and mushrooms-I couldn’t find any salami without sugar or dextrose. Then I cooked it for another minute in the microwave. I know that microwaves differ, but I’d prefer my crust cooked and I’m super happy to be having pizza again!
