- 2 Eggs
- ¼ cup Heavy Cream
- ¼ cup Coconut Flour
- ¼ cup Melted Butter
- 1 tablespoon Erythritol
- 1 teaspoon Baking Powder
- ½ teaspoon Cinnamon
- 1 pinch Nutmeg
- 1 pinch Salt
- Whisk together eggs, heavy cream, butter, and sugar in a bowl.
- In a separate bowl, whisk together coconut flour, baking powder, cinnamon, nutmeg, and salt.
- Blend the wet mixture into the dry ingredients.
- Lightly coat a non-stick pan with cooking spray. Ladle in about ¼ cup of the batter into the pan and cook until bubbly.
- Flip and cook for another 1-2 minutes.
