Add all of the ingredients except for the pork rinds to a mixing bowl, and stir to combine well.
Spread the pork rind crumbs out over a large plate or shallow bowl.
Form the cauliflower mixture into 17 evenly sized balls.
Roll the balls into the pork rinds to coat them on all sides.
Place the cauliflower balls into a tray or basket in the air fryer, and cook for 12-15 minutes, turning halfway through.
