Once boiling, remove from heat and stir in Jell-O, whisking until dissolved.
Stir in 1 cup cold water, and 8 oz. Jameson.
Evenly divide the Jell-O mixture among 2 oz. cups.
Chill in the refrigerator for 2-4 hours, until Jello is set.
Top with whipped cream and festive sprinkles.
