Place the mozzarella cheese in 8 circles on a parchment lined baking sheet. Be sure to leave some room between each circle, as they will expand when baking.
Bake the cheese for 6-8 minutes until the edges begin to brown.
Remove the cheese from the oven and let it cool and become crispy.
Place a cheese circle on a plate, and top with 4 slices of pepperoni, 3 slices of salami, provolone, tomato and lettuce.
Drizzle with Italian dressing, or dip into the dressing while eating if you prefer.
Place another cheese circle on top to complete the sandwich.
Repeat steps 5-7 to make a total of 4 sandwiches.
