Place the shredded cheese in 8 even piles on a large parchment lined baking sheet, and form the piles of cheese into 8 even circles. Be sure to leave a bit of room between each circle to allow them to expand.
Bake for 10 minutes until the cheese takes on a lacelike appearance.
While the cheese is baking, mix together the shredded chicken, cream cheese, green onions, garlic powder and salt and pepper to taste until well combined.
Remove the cheese from the oven and allow it to sit for just a minute or so to cool slightly.
Place a layer of the filling down the center of each cheese circle.
Roll the cheese circles up around the filling to form taquitos.
Let the taquitos cool and allow the cheese to harden.
In a bowl, whisk together the ingredients for the sauce. Additional buffalo sauce can be added to thicken the mixture more if desired.
Drizzle the sauce over the taquitos or dip them into it for serving.
