In a large bowl, stir together sugar cookie mix, butter, egg, and 1 tbsp flour until well-mixed and you have a soft dough.
Divide into three parts and place each dough ball into a small bowl.
In the first bowl, add chocolate chips, and cocoa powder to the dough ball and mix well.
In the second bowl, add white chocolate chips, vanilla, 1 tbsp flour, and 3 drops of yellow food coloring to the dough ball and mix.
In the third bowl, add cinnamon chips, pumpkin pie spice, 1 tbsp flour, 2 drops yellow food coloring, and 2 drops red food coloring to the dough ball and mix.
Preheat oven to 350°F.
Roll out each dough ball into a long, ¾ inch wide strip, ¼ inch in thickness.
Place the strips together so the edges are touching and lightly smudge together.
Cut the three strips together into triangles.
Line a cookie sheet with parchment paper and arrange triangles an inch apart from one another.
