Add the shredded mozzarella cheese and the cream cheese to a bowl that is microwave safe. Heat the cheeses at 30 second intervals until well combined and completely melted.
Place the cheese mixture into a bowl, and add the almond flour, baking powder, garlic powder and xanthan gum. Knead the mixture with your hands until well incorporated.
Beat the dough mixture with the large egg until well combined, and place the dough into the freezer to chill for 30 minutes.
Preheat the oven to 450 degrees.
Roll the chilled dough out into a rectangular shape between two pieces of parchment paper. Make the dough about ΒΌ of an inch thick.
Cut the dough into 8 rectangular shapes a little bit longer than the length of a string cheese stick.
Place 4 pepperoni slices down the center of each rectangle of dough, and a cheese stick on top of that.
Roll each rectangle lengthwise until it is sealed into a breadstick around the filling. Pinch the ends closed, and tuck them underneath.
Place the pepperoni pizza sticks on a silpat or parchment lined baking sheet, and bake for 10-15 minutes until browned and cooked through.
Brush the melted butter onto the top of each pepperoni pizza stick, and garnish with parmesan cheese before serving.
