Place the mozzarella and cream cheeses into a microwave safe bowl. Heat for 30 seconds at a time until the cheeses are melted and well combined into a dough.
Add the dough to a mixing bowl, and place the almond flour, baking powder and Swerve confectioners sugar substitute into the bowl as well.
Knead the dough with your hands until it is well combined.
Add the egg and vanilla extract to the bowl with the dough and beat on high until incorporated well.
Place the dough into the freezer to chill for 30 minutes.
Preheat the oven to 350 degrees.
Roll the chilled dough out into a rectangular shape about ¼ to a ½ inch thick between two pieces of parchment paper.
Coat the dough in the melted butter. If you wish to use the orange extract, combine it well with the butter before coating the dough.
Mix the cinnamon and Swerve brown sugar substitute together in a bowl, and sprinkle it over the butter mixture on the dough.
Slice the dough lengthwise into strips about an inch wide. Start at one end, and roll the dough up in a spiral.
If the dough is too soft to roll because of the butter, return it to the freezer to chill for another 30 minutes and then try again.
