Prepare the chocolate keto cookies in the size and shape of the bottom of a cupcake liner.
Let the cookies cool and place one cookie in the bottom of each cupcake liner, this recipe will make 8 mini cheesecake bites total.
Add the cream cheese, Greek yogurt, vanilla extract, 1 crumbled chocolate cookie and Swerve sweetener to a mixing bowl, and beat on high until smooth and creamy.
Fold in another crumbled chocolate cookie to the mixture.
Place 1 cookie on the bottom of each cupcake liner
Place heaping tablespoons of the mixture on the top of each cookie in the cupcake liners, and smooth it into an even layer.
Place the cheesecake bites into the freezer for 2-3 hours until they are set completely.
Serve topped with a piece of chocolate cookie on top if desired.
