In a microwave safe bowl, place the shredded mozzarella cheese and 1 oz. of cream cheese. Heat at 30 second intervals until completely melted and well combined into a cheese dough.
Place the cheese dough in a mixing bowl, and add the almond flour, swerve substitute and baking powder. Knead with your hands until completely combined.
Add the vanilla extract and egg to the dough mixture, and blend on high until smooth.
Place β of the mixture into the mini waffle maker, and cook for 3-5 minutes until done to your liking.
Repeat step 5 with the remaining batter to make 3 chaffles total.
In a mixing bowl, combine the ingredients for the marshmallow fluff, and beat on high until thickened.
Add the ingredients for the chocolate filling to a mixing bowl, and beat until smooth and creamy.
Place a chaffle down on a plate. Add Β½ of the marshmallows fluff and half of the chocolate fling to the top of it, and then top with another chaffle.
Repeat step 9 with the remaining filling, and top with the last chaffle.
Drizzle with sugar free chocolate sauce and chopped sugar free marshmallows for garnish if desired.
You can make these into single servings by placing β each of the marshmallow fluff and chocolate filling onto each individual chaffle, and serving separately.
