Place the mozzarella and cream cheeses into a bowl that is microwave safe. Heat the cheese mixture at 30 second intervals until completely melted and well combined into a cheese dough.
Add the almond flour and baking powder to the cheese mixture, and knead with your hands until completely combined.
Place the dough and an egg into a mixing bowl, and beat on high until well combined.
Chill the dough in the freezer for 30 minutes.
Preheat the oven to 350 degrees.
Wet your hands, and form the dough into 5 even sized balls. Flatten the balls of dough into a rough shape about ΒΌ - Β½ inch thick, and place them onto a parchment lined baking sheet.
Bake for the bread for 15 minutes until browned and cooked through. Let cool.
Top each gyro bread with 2 oz. chicken strips, lettuce, tomato, some feta and tzatziki sauce before serving.
