Whisk together eggs, heavy cream, butter, and erythritol in a bowl.
In a separate bowl, whisk together coconut flour, baking powder, and salt.
Blend the wet mixture into the dry ingredients.
Lightly coat a non-stick pan with cooking spray. Ladle in about ¼ cup of the batter into the pan and cook until bubbly. Flip and cook for another 1-2 minutes.
