Combine all of the ingredients for the cookies together in a mixing bowl, and blend on high until completely combined.
Place the cookie batter into the freezer for 30 minutes to chill.
Form the chilled dough into 1-2 inch balls, and flatten them in the center with your thumb to create an indentation.
Blend together the cheesecake topping ingredients in a mixing bowl until smooth and creamy.
Using a spoon, fill in the indentations in each cookie with the cheesecake mixture.
Bake the cookies for 10-12 minutes until browned and cooked through.
Let the cookies cool completely and serve.
