In a mixing bowl, whisk together all of the ingredients for the chaffle
until well combined.
Remove the chaffle from the maker, and repeat until you have made a total of four chaffles.
In a mixing bowl, combine all of the ingredients for the filling,
and beat on high until smooth.
Place the chocolate chips and the coconut oil in a microwave safe bowl, and heat at 30 seconds intervals until melted and combined.
Top each of three chaffles with ⅓ of the filling, stacking the chaffles on top of each other as you go.
Drizzle the chocolate over the top of the chaffles before serving.
